How fresh is your milk?
From the time milk gets from the farm to the grocery store, it’s been days. It can be hard to believe that it is still possible to purchase and consume milk that’s been drawn a few hours earlier.
Luckily for residents of the Fredon, New Jersey area, this is now a reality thanks to Springhouse Creamery dairy farm owners Peter and Marilyn Southway. A few months back, a Lili Pasteurizer was bought and installed on-site, permitting a faster turn-around time on milk processing and delivery.
The machine reaps benefits for both the farm’s economy and the Fredon population.
The Machine
The Lili Pasteurizer, one out of two machines in existence, was bought initially to facilitate the Springhouse Creamery cheese-making operation. However, an opportunity to provide a fresh milk delivery service was quickly identified.
The machine brings forth many advantages that commercial milk processing methods do not.
The Lili pasteurizer is considered a low-impact machine; it is more gentle on the milk hence keeping its natural composition more or less intact. The milk is heated for a much shorter time frame and requires very little pumping which can alter the taste.
The machine has the capability to run through four gallons of milk per minute and takes approximately three hours to process 3,000 pounds. The speed and processing system of the machine allows for the product to be on store shelves within hours.
The Milk
The milk produced by the Southway farm is lightly pasteurized maintaining the sought after taste and health benefits of raw milk without the risk of bacterial infection. The milk passes state regulations and has been cleared as safe for consumption.
The milk is also non-homogenized. While highly debated, non-homogenized milk can be seen as healthier and more nutritious by consumers due to the lack of preservatives and the fact that healthy proteins and fats aren’t stripped from the milk.
The Southway’s milk can be consumed within hours maintaining high freshness standards and the best taste and quality available in the region.
