Beginning in mid-March, Oberweis will be selling all of their milk in amber milk bottles. Why? Because they’ve discovered that grocery store lighting is changing the taste of their milk.
Grocery Store Lighting is Damaging to Milk’s Taste
One day, the Oberweis family discovered a shocking truth: that the milk they were selling in grocery stores didn’t taste as good as the milk they sold on-site and through home milk delivery.
It took two years to figure out, but eventually the Oberweis team realized that it was the grocery store lighting that was to blame. The LED lights used in the refrigerated cases was causing the taste to change.
And there’s scientific evidence to back up his idea.
The lights in grocery store refrigerators can start to affect milk’s taste after just four hours of exposure. As the milk sits on the shelves, the LED and fluorescent lighting can alter the flavor. It doesn’t go bad, but the closer it sits to those lights, the more the fresh quality it left the farm with can decrease.
And it’s not just the taste that we have to worry about.
According to a study, 90% of the vitamin A is lost in milk after 24 hours of exposure to these lights. The riboflavin and healthy fat content are also negatively affected.
With this evidence to back up their theory, Oberweis Dairy knew there was something they needed to change.
They started with asking their local grocery stores to consider alternate lighting options in the dairy refrigerators. When that didn’t work, they took matters into their own hands.
The Amber Milk Bottle Difference
Oberweis Dairy is taking a stand, and has begun to package all of their milk in amber milk bottles. This will protect the milk from the grocery store lighting and help to preserve the fresh taste, no matter how bright the lights are.
Amber glass has the ability to filter out certain wavelengths of light. This prevents the LED lighting from having such a hard effect on the milk.
As a result, the milk stays fresh and safe, and retains that high quality flavor it has when it’s purchased directly on the farm.
Beginning this month, grocery store customers will see the new amber-colored bottle. While the scientific evidence is there, the biggest concern the Oberweis family has is the customer reaction.
Those who buy their milk straight from the farm, either on-site or through Oberweis milk delivery, will still enjoy their milk in the traditional clear glass bottles. But those who shop at the grocery store are in for a surprise.
Oberweis Dairy has used clear glass milk bottles for the last 90 years, and customers enjoy the nostalgic feel of the bottles.
But this is a risk the family is willing to take, as milk quality is the ultimate highest priority.

The Oberweis Dairy Tradition
Oberweis Dairy is a fourth-generation owned and operated family dairy farm and ice cream shop in North Aurora, Illinois.
Peter Oberweis, the farm’s founder, started selling extra milk from his farm to his neighbors in 1927. He was doing this from the back of his wagon.
Soon, he co-owned Big Woods Dairy, and in 1930 he bought out the other owner, and Oberweis Dairy was formed.
In 1951, Peter’s son, Joe, opened the first Oberweis ice cream shop. He used hand-crafted, homemade recipes that are still served to this day. A second location opened later, in 1991.
A new dairy plant opened in North Aurora in 1997, which serves as the current headquarters. Joe Oberweis, the current, fourth-generation owner, has been the CEO since 2007.
It was actually Joe’s father that noticed the off-tasting milk from the grocery store, which led to the new amber milk bottle concept.
